Repair Cracked Cheesecakes with Sour CreamIf your homemade cheesecake comes out of the oven with a cracked surface you can always ignore the cracks or add a fruit topping, but if you want to display a smooth even cheesecake you can fill in the cracks with a sour cream mixture and bake it for a few minutes and none will be the wiser.

Instructional site eHow shares that you can make a paste to fill in the cracks by mixing sour cream, sugar, and vanilla extract. Whisk that together for a minute or so and then spread the mixture over the top of your cheesecake, pushing the mixture down into the cracks. If you've just baked your cheesecake put it back in the preheated oven on bake for 10 minutes and if the cake is chilled or room temperature bake it for 14 minutes.

With the help of the sugar and vanilla the sour cream won't be out of place as cheesecakes are expected to have a bit of a tart edge to the flavor. Photo by Carol329
